Heirloom Tomato Pie

Homemade Tomato Pie… Need I say more?! This is one of my favorite recipes! You will just love it!

Around here, the crown jewel of the summer are home grown ‘maters! They are so juicy and flavorful! What’s not to love?!!

For this recipe, I used our organic tomatoes, spinach, and fresh basil all straight out of our garden, eggs from our girls, and shredded Cabot mozzarella cheese.


1-2 cups of spinach

1 large tomato

4 large eggs

1 cup of shredded cheese

1.5 cups of cottage cheese

1 tbsp of EVOO

4 fresh basil leaves, chopped

A dash of salt & pepper

Other optional ingredients could include mushrooms and Canadian bacon. Mmmmmm!


How to–

Preheat oven to 350F. Grease a 9×9 pan with EVOO or coconut oil.

Combine the two cheeses, oil, salt, pepper, eggs, and spinach

Pour 1/2 of the mixture into your pan. Slice your tomato, and add the slices to the top of the mix, along with the fresh basil leaves. Pour in the remaining mixture. Add a little shredded cheese to top it off!

Cook for 35 minutes, or as long as it takes for the “clean knife” test. Savor every bite! Mmmmmmmm Mmmmmmmm good!
