Howdy folks! So, let’s chat about kale!
If kale were a super hero, then it would definitely be Super Man. It’s got more muscle (denseness) then the other salad greens, it is very versatile, and it’s known as a “super food” because it’s so jam packed with nutrients..which, ok, let’s keep it real..we all know that healthy does not always equal crazy delicious!
But, if you’ve never ventured into eating kale, and you kind of/sort of have been wanting to try it, then my friend, this is the recipe for you!
And if you already love kale, prepare for your socks to be knocked off cuz your body is going to love you for feeding it such amazing food! Did I also mention making this is super easy! A total win-win for you!
What at you need:
-A large bushel or bunch of (preferably) organic kale
-1 tablespoon of sea salt
-3/4 cup of extra virgin olive oil
– 1 cup of sunflower seeds
– 1 cup of dried, sweetened cranberries
How to make:
In a small container, mix the juice from 2 lemons and 3/4 cup of EVOO, and set it aside.
Rinse your kale and let it dry slightly. Separate the kale leaves from the main stem using a kitchen knife. I don’t have a great track record with kitchen knives, so I just use my fingers. While I’m at it, I break the kale leaves up into smaller “bite size” pieces. If there are any big pieces of stem from the leaves, get rid of those, too. Put all your kale into a bowl. Add the salt, cranberries, and sunflower seeds.
Place a top or plastic wrap over the bowl, and shake it really well to distribute all the ingredients. Uncover, and add half of the EVOO and lemon juice mixture. Cover and shake it, baby, shake it!
Now add the remaining EVOO & lemon juice, and shake one last time. Refrigerate for at least 2 hours, then enjoy!
On a side note, you can substitute other seeds for the sunflower seeds, use nuts, and other types of dried fruit. Have fun and get creative with it! I hope your taste buds love it as much as mine!
