Kale Salad with Carrot Ginger Dressing

The power of Kale has woo’ed me, yet again! I can’t stay away from this stuff! Even Mountain Man will occasionally indulge, especially if it is smothered in something ultra yummy like Ginger Carrot dressing. This stuff is good.. Really good, and jammed packed with nutrients! Did you know kale has a rarely mentioned superpower? It naturally helps your body to rid itself of toxins by acting as a diuretic, aka, it makes you pee. A lot. Go Kale! Fist pump!

So, my new favorite way to eat this leafy green is with the Ginger Carrot dressing. It’s really refreshing, and just makes my body go Mmmmmmmm. Yep, Seriously delish!

Let’s get started!

Ginger Carrot dressing—

2-3 carrots, peeled and chopped

3 Tablespoons of ginger, chopped

1 green onion, finely chopped

2 tablespoons of soy sauce

1/2 cup of balsamic vinegar

3/4 cup of extra virgin olive oil

A squeeze of 1/2 lemon

A sprinkle of sugar (optional)

A dash of sea salt

Combine all ingredients in a food processor until mixed well. Pour over a half bag (6oz.) of organic kale. Chill for 2 hours, then enjoy!
